Cheesy Bacon Butternut Shells

COOK TIME: 30 Minutes

Ingredients:

1 pkg Horizon® Pasta Shells and white cheddar cheese
1/2 cup milk
2 Tbs butter
1 pkg Frozen organic Butternut Squash
1 Tbs canola oil
Sprinkle of salt and pepper
1/4 cup cooked bacon, drained, cut into 1/4" pieces
1 cup Arugula (packed), torn into pieces

Directions:

1. Prepare mac and cheese according to package instructions, but with an extra 1/4 c milk.
2. Preheat oven to 375 degrees and drizzle oil on a cookie sheet.
3. Spread frozen butternut squash onto sheet and sprinkle with salt and pepper.
4. Roast 20-30 minutes until soft and a little crispy.
5. Fold arugula, bacon, and squash into prepared mac 'n cheese while hot, making sure arugula wilts completely
